Spicy Chicken And Rice
- 4 chicken breasts
- 1 medium onion, chopped
- 1 Tbsp. olive oil
- 1 tsp. garlic
- 1 can mushroom soup
- 1 c. cooked rice
- 4 sweet Italian sausages
- 1/2 c. sliced green pepper
- 1 small bay leaf
- 1 tsp. oregano
- 1 (14 1/2 oz.) can tomatoes
- 1/2 c. Jack cheese, grated
- Bake chicken breasts at 400u0b0 for 30 minutes. Cool.
- In skillet, brown sausages.
- Cool. Cut into 1/2-inch slices.
- Set aside. Saute onion and green pepper in olive oil until tender. Add seasonings.
- Stir in chicken, sausage, soup, tomatoes and rice.
- Bring to a boil. Reduce heat and simmer 5 minutes.
- Spoon into a buttered 1 1/2-quart baking dish.
- Sprinkle with cheese. Broil until cheese melts.
