Chocolate Caramel Cake
- 1 (18 1/2 ounce) package chocolate cake mix
- 1 cup and 2 tablespoons sugar
- 12 cup butter
- 12 cup heavy whipping cream
- 1 cup caramel sauce
- 12 cup caramel, to garnish
- Make single-layer cake according to package directions.
- Remove cake from oven, let cool slightly, then pierce all over with a fork.
- Heat caramel sauce in microwave for 1 minute.
- Pour caramel sauce over warm cake.
- Chill cake in fridge for half an hour.
- For frosting, heat 2 T. sugar over medium heat until it dissolves and turns golden brown, set aside.
- Combine remaining sugar, butter, and cream in saucepan and cook on medium, stirring constantly until boiling.
- Add caramelized sugar and boil.
- Cook another 2 minutes, stirring constantly.
- Remove from heat and beat until desired consistency.
- Frost cooled cake and garnish with caramel pieces.
