Waldorf Red Cake
- 1/2 cup butter
- 1-1/2 cup sugar
- 1 tsp. vanilla
- 2 tbsp. cocoa
- 2-1/4 cup sifted cake flour
- 2 eggs
- 2 oz. red food coloring
- 1/4 tsp. salt
- 1 cup buttermilk
- 1 tbsp. vinegar
- 1 tsp. baking soda
- 1 cup butter
- 1 cup sugar
- 5 tbsp. flour
- 1 cup milk
- 1 tsp. vanilla
- Cream shortening and sugar, add eggs, then beat well.
- Make a paste of food coloring and cocoa and add to mixture.
- Add salt and buttermilk alternating with flour.
- Add vanilla.
- Dissolve soda in vinegar and add last.
- Blend all ingredients as little as possible.
- Bake in 2 8-inch cake pans at 350F for 35-40 minutes or until toothpick inserted in middle come out clean.
- Icing: Cream butter and sugar.
- Cook flour in milk until very thick, Stirring frequently to avoid lumps.
- Allow mixture to cool, then combine with butter and sugar mixture.
- Add vanilla and beat until creamy.
