Apple Oat Cake With Fruit Cream
- 2 c. Pippin or Granny Smith apples
- 2 tsp. honey
- 1 Tbsp. lemon juice
- 1 1/4 c. wheat bran (raw)
- 1/2 c. nonfat powdered milk
- 1/2 c. oatmeal
- 2 egg whites
- Core, quarter and steam apples for 10 minutes.
- Place cooked apples and their juice in food processor and process to a sauce. Add honey, lemon juice, wheat bran and powdered milk to applesauce and process to mix well.
- Add oatmeal to apple mixture and process to just fold in, being careful not to overprocess and lose texture.
- Whip egg whites until stiff but not dry and fold apple mixture into whipped egg whites.
- Spray a 9 x 13-inch baking pan with nonstick spray and pour batter into pan.
- Bake at 350u0b0 for 30 to 40 minutes to brown.
- Cool cake, cut into 24 pieces and top with Orange Cream.
