Crunchy Potato Latkes Recipe
- 6 med. potatoes
- 2 Large eggs
- 2 tbsp. matza meal
- 1 teaspoon salt
- 1 tbsp. lemon juice
- 1 med. grated onion
- 1/4 teaspoon baking pwdr
- Pepper to taste
- Grate potatoes and drain.
- Marinate with lemon juice.
- Add in remaining ingredients and mix well.
- Drop by Tbsp.
- into 1/4" deep warm oil.
- Fry till brown on both sides, turning only once so which pancakes don't get soggy.
- May be frzn.
- If reheated in oven they will be crispy, microwave and they will be soft.
