Baked Tomatoes (Tomates A La Provencale) Recipe
- 8 x Ripe tomatoes Salt
- 1/4 c. Minced parsley
- 2 tsp Fresh minced thyme
- 4 x Garlic cloves, chopped
- 1/4 c. Extra virgin olive oil
- 8 Tbsp. Breadcrumbs
- Preheat oven to 400 degrees F.
- Cut the tomatoes horizontally and remove core.
- Place cut-side up in a large, rectangular baking dish.
- Sprinkle on the salt, parsley, thyme, and garlic.
- Pour on the extra virgin olive oil proportionately.
- Sprinkle with breadcrumbs.
- Bake, uncovered, for about 30 min.
