Basmati Lemon Rice Recipe
- 1/2 c. oil
- 4 sm onions minced
- 4 x garlic cloves minced
- 2 tsp black mustard seeds
- 12 x curry leaves - (to 15)
- 4 tsp split unpeeled urad dal soaked in water for 45 min
- 4 tsp golden brown raisins
- 4 c. cooked basmati rice
- 2 tsp turmeric Salt up to 2 tspns
- 2 tsp sugar
- 1/4 c. halved roasted cashews
- 1/4 c. lemon juice
- 8 x green onions finely minced
- 1/2 c. minced cilantro for garnish
- Heat oil over medium heat in large skillet or possibly wok.
- Saute/fry onions and garlic till soft, 2 min.
- Add in mustard seeds, curry leaves, urad dal and raisins and saute/fry 2 min.
- In a bowl, mix rice, turmeric, salt, sugar and cashews, saving a few cashews for garnish.
- Spoon rice into skillet with onion mix and heat through, stirring, 2 to 3 min.
- Sprinkle with lemon juice.
- Garnish with reserved cashews, green onions and cilantro.
- This recipe yields 8 to 10 servings.
