Basmati Lemon Rice Recipe

  1. Heat oil over medium heat in large skillet or possibly wok.
  2. Saute/fry onions and garlic till soft, 2 min.
  3. Add in mustard seeds, curry leaves, urad dal and raisins and saute/fry 2 min.
  4. In a bowl, mix rice, turmeric, salt, sugar and cashews, saving a few cashews for garnish.
  5. Spoon rice into skillet with onion mix and heat through, stirring, 2 to 3 min.
  6. Sprinkle with lemon juice.
  7. Garnish with reserved cashews, green onions and cilantro.
  8. This recipe yields 8 to 10 servings.
