Chicken tikka masala quesadilla
- 3 tbsp vegetable oil
- 1/2 red onion, chopped
- 2 clove garlic, minced
- 2 tbsp ground cumin
- 2 tbsp tandoori spice
- 1 tsp garam masala
- 1 tsp ground ginger
- 1 tsp ground tumeric
- 1/2 tsp ground cardamom
- 1/4 ground cinnamon
- 1 lb chicken tenders/breasts, small cubes/chunks
- 1/2 cup chicken stock
- 2 roma tomatoes, diced
- 1 tbsp dried fenugreek leaves
- 1 salt to taste
- 5 8" flour tortillas
- 1 butter for tortillas
- 1/2 cup shredded cheese, any flavor(s)
- In a wok, heat oil on high and saute onions until translucent.
- Add garlic and cook until fragrant, about 30 seconds.
- Add all the seasons except salt and cook for another minute.
- Add chicken and cook until browned on all sides.
- Add chicken stock, tomatoes, fenugreek and salt.
- Cook until gravy is all cooked down.
- On a hot griddle, place butter and a tortilla on top and let butter spread on the down side of tortilla.
- Spoon chicken filling on one half of tortilla then add cheese on top.
- Fold tortilla over then flip as needed until both sides are golden brown.
- Serve!
