Chicken tikka masala quesadilla

  1. In a wok, heat oil on high and saute onions until translucent.
  2. Add garlic and cook until fragrant, about 30 seconds.
  3. Add all the seasons except salt and cook for another minute.
  4. Add chicken and cook until browned on all sides.
  5. Add chicken stock, tomatoes, fenugreek and salt.
  6. Cook until gravy is all cooked down.
  7. On a hot griddle, place butter and a tortilla on top and let butter spread on the down side of tortilla.
  8. Spoon chicken filling on one half of tortilla then add cheese on top.
  9. Fold tortilla over then flip as needed until both sides are golden brown.
  10. Serve!
