Sushi Rice
- 3 cups medium grain rice (1 C. = 180 ml.) or 3 cups short-grain rice (1 C. = 180 ml.)
- 3 ounces mitzukan sushi rice seasoning
- Rinse rice with water about 5 times.
- Place rice in rice cooker and add the appropriate amount of water, reducing water by approximately 2 oz.
- Cook the rice.
- After it is cooked, rest rice for 10-20 minutes.
- Spread cooked rice in a large shallow pan or bowl.
- Pour sushi seasoning over the rice.
- Mix well while the rice is very hot.
- Spread rice mixture back out in the pan or bowl and allow it to sit for 10 minutes for cooling.
- Rice is now ready to use in sushi.
