Berries In A Cloud Recipe
- 1 lb Strawberries cut in half
- 6 ounce Blueberries Rinsed and dry
- 6 ounce Raspberries Rinsed and dry
- 3 Tbsp. raspberry jelly Seedless
- 3 x egg whites
- 1/4 tsp Cream of tartar
- 6 Tbsp. Sugar
- In a large mixing bowl, combine all berries.
- Heat preserves in microwave till melted, about 20-30 seconds.
- Pour hot preserves (let cold slightly)
- over berries and mix gently.
- Turn berries into a shallow baking dish.
- Beat egg whites and cream of tartar at high speed till foamy.
- Gradually add in sugar, beating constantly to stiff peaks and sugar is dissolved.
- Pile meringue over berries, swirling lightly.
- Sprinkle with 1 1/2 Tbs pine nuts if you like.
- Bake in preheated 350F oven till meringue is golden, about 12-15 mins.
- NOTES : It's a wonderful dessert which looks like you fussed all day, and the raspberries add in a lot of fiber.
