Caesar Dressing - Lightened Up
- 1 cup light mayonnaise
- 5 tablespoons egg substitute
- 14 cup grated parmesan cheese
- 2 tablespoons water
- 1 tablespoon olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon anchovy paste
- 2 garlic cloves, minced
- 2 teaspoons sugar substitute
- 12 teaspoon fresh coarse ground black pepper
- 14 teaspoon salt
- 12 dried parsley flakes, crushed fine
- Combine all ingredients in a medium bowl.
- Use an electric mixer to beat ingredients for about 30 seconds.
- Cover bowl and chill for several hours before serving so that flavors can develop.
