Sally'S Green Noodle Lamb Casserole
- 2 Tbsp. olive oil
- 1 clove minced garlic
- 1/4 c. chopped onion
- 1 1/2 lb. ground lamb
- 1/2 c. water
- 1 (10 oz.) can cream of mushroom soup
- 1 (8 oz.) can tomato sauce
- 1 tsp. salt
- 1 tsp. oregano
- 1/2 tsp. pepper
- 8 oz. spinach noodles
- 1/4 c. butter or margarine
- 1/4 c. Parmesan cheese
- 1 c. Ricotta or cottage cheese
- Heat oil in skillet.
- Add garlic and onion.
- Saute onion until transparent.
- Add lamb and brown; drain off fat.
- To lamb add water, soup, tomato sauce, salt, oregano and pepper.
- Simmer mixture gently.
- When ready to assemble, layer lamb, noodles and cheese and repeat.
- Bake 15 minutes, covered, at 350u0b0 in 8 x 12-inch pan (sprayed with Pam) for 15 minutes.
- Serves 8.
