Edamama Guacamole
- 1 12 cups cooked edamame (or ready-to-eat refrigerated)
- 2 small ripe avocados, peeled and pitted
- 2 dashes dried chipotle powder (optional)
- 1 jalapeno
- 13 bunch cilantro
- 14 cup onion, roughly chopped
- 2 -3 limes or 2 -3 lemons, juice only
- 2 -3 tablespoons water (optional)
- sea salt
- fresh ground pepper
- Put edamame, avocado, chipotle, cilantro, onion and juice in a food processor and pulse until almost smooth.
- Add enough water or extra juice to make a creamy consistency and pulse again.
- Transfer to a bowl, season with salt and pepper.
- Serve with pita chips, tortilla chips, carrots, celery.
- This also makes a good sandwich spread.
