Lemon Buttered Asparagus
- 2 12 lbs asparagus
- 3 tablespoons butter
- 1 tablespoon lemon juice
- 34 teaspoon salt
- Prepare asparagus: hold base of eash stalk firmly and bend.
- End will break off where stalk becomes tough; discard ends.
- With a sharp knife or potato peeler, remove scales.
- Trim rough ends to make even.
- In 12 inch skillet, over medium heat, melt butter watching so it doesn't burn.
- Add asparagus, lemon juice and salt.
- Cover and cook till tender-crisp, about 5 minutes, turning occasionally.
