Key Lime Pie
- 250 g digestive biscuits
- 100 g butter, melted
- 5 limes
- 400 g condensed milk
- 300 ml heavy cream
- 20 g bitter chocolate
- Whiz the digestive biscuits in a food processor until breadcrumbs.
- Mix in the melted butter.
- Press the mixture into the base of a greased 20cm loose-bottomed pan.
- Place in the refrigerator for 30 minutes to firm up.
- Meanwhile, zest and juice the limes into a bowl.
- Add the condensed milk and cream and whisk until creamy.
- Pour over the chilled base.
- Place back in the refrigerator for at least an hour.
- Decorate with shavings of bitter chocolate before serving.
