Strawberry Mint Spritzers

  1. In a food processor or blender, process the strawberries until smooth.
  2. Add the sugar, mint leaves, lime zest, and lime juice.
  3. Process until blended.
  4. To serve, pour 1/3 cup strawberry mixture and 2/3 cup club soda into each glass.
  5. Add ice and stir.
  6. Garnish with the lime wedges and mint sprigs.
  7. For a smoothie-like drink, reduce the club soda or sparkling water to 1 cup, well chilled.
  8. Process the strawberry mixture as directed above.
  9. Pour 1/2 cup strawberry mixture and 1/4 cup club soda or sparkling water into each glass.
  10. (serves 4, 1 cup per serving).
