Strawberry Mint Spritzers
- 1 pound strawberries, stemmed and halved
- 1/2 cup sugar
- 6 fresh mint leaves, finely chopped
- Grated zest from 1 medium lime (about 1 teaspoon)
- 2 tablespoons lime juice
- 4 cups club soda or sparkling water
- 6 lime wedges (optional)
- 6 mint sprigs (optional)
- In a food processor or blender, process the strawberries until smooth.
- Add the sugar, mint leaves, lime zest, and lime juice.
- Process until blended.
- To serve, pour 1/3 cup strawberry mixture and 2/3 cup club soda into each glass.
- Add ice and stir.
- Garnish with the lime wedges and mint sprigs.
- For a smoothie-like drink, reduce the club soda or sparkling water to 1 cup, well chilled.
- Process the strawberry mixture as directed above.
- Pour 1/2 cup strawberry mixture and 1/4 cup club soda or sparkling water into each glass.
