Seafood Fried Rice Recipe
- 2 tbsp. veg. oil
- 1 1/2 c. onion, sliced 1" long
- 4 ribs celery, sliced diagonally
- 1 tbsp. ginger root, minced
- 2 cloves garlic, minced
- 1 red pepper, diced
- 4 c. rice, cooked
- 1/2 c. beef broth
- 1/2 pound shrimp, cooked and cut in half
- 1 c. crab meat, flaked
- 1/2 pkg. snow peas, cut in strips
- 2 Large eggs
- 2 tbsp. soy sauce
- Green onions and tops, thinly sliced
- Heat oil in large skillet over low heat.
- Add in onions, celery, garlic and ginger.
- Stir and cook 5 to 8 min.
- Add in red peppers and cook for 3 min.
- Add in rice and broth.
- Cook for 2 min.
- Add in shrimp, crab and snow peas and cook for 2 min.
- Remove from heat.
- Beat Large eggs and soy sauce together.
- Push the rice to one side of the skillet.
- Return to low heat and add in Large eggs and stir till Large eggs are set, fold gently into rice.
- Heat and remove to hot bowl.
- Sprinkle with green onion tops.
