Fajitas
- 1 1/2 lb. steak, trimmed to 1/2 x 2-inch strips
- 2 cloves garlic, crushed and peeled
- 1 Tbsp. chopped cilantro
- 1 Tbsp. crushed red pepper or jalapeno
- 1/4 tsp. salt
- 1/4 tsp. pepper
- guacamole
- salsa
- 1 sliced green pepper
- 1 diced large tomato
- 1/4 c. olive or peanut oil
- juice of 2 limes
- 12 flour tortillas
- 2 c. shredded Cheddar cheese
- 1 sliced onion
- 1 c. sour cream
- In medium bowl mix oil, lime juice, cilantro, garlic, red pepper, salt and pepper.
- Pour marinade over steak.
- Cover and marinate in refrigerator turning occasionally 1 to 4 days. Barbecue steak on grill brushing with marinade.
- In skillet, brown green pepper and onion in butter.
