Mexi Corn Lasagna Recipe
- 1 pound grnd beef, browned & liquid removed
- 1 (17 ounce.) can corn, liquid removed
- 1 (15 ounce.) can tomato sauce
- 1 c. Pace Picante Sauce
- 1 tbsp. chili pwdr
- 1 1/2 teaspoon cumin
- 1 (16 ounce.) carton low fat cottage cheese
- 2 Large eggs, slightly beaten
- 1/4 c. Parmesan cheese
- 1 teaspoon oregano
- 1/2 teaspoon garlic salt
- 1 pkg. tortillas, at least 12
- Combine first 6 ingredients, simmer 5 min.
- Arrange 6 tortillas on bottom and sides of lightly grease 13"x9"x2" baking dish, overlap as necessary.
- Top with half meat mix.
- Spoon cheese mix over meat.
- Arrange remaining tortillas over cheese mix.
- Top with remaining meat mix.
- Bake in preheated 375 degree oven about 30 min.
- Remove from oven, sprinkle with 1 c. shredded cheddar cheese.
- Let sit 10 min.
