Italian-Style Pork Chops(Costolette Di Maiate Italiano)
- 4 pork chops (about 1-inch thick)
- 1 garlic clove, minced
- 1 1/2 Tbsp. olive oil
- 1/2 c. tomato sauce
- 1 green pepper, cut into thin strips
- 1/4 lb. fresh mushrooms, sliced or 1 (3 oz.) can mushroom pieces, drained
- 3/4 tsp. oregano
- 1/4 c. tomato juice
- 4 oz. hot Italian sausage (optional)
- salt and pepper to taste
- Trim excess fat from pork chops.
- Mix salt, pepper and garlic in a bowl.
- Rub on pork chops.
- Heat oil in a large skillet and brown chops on both sides.
- Add tomato sauce, green pepper, mushrooms, oregano and tomato juice to skillet.
- Stir.
- Cover and cook over low heat for about 30 minutes.
- (If you add sausage, brown it in a separate pan and drain.
- Add to skillet during the last 10 minutes of cooking.)
- Serves 4.
