Blueberry Glaze Pie Recipe
- 1 baked 9 inch pie shell
- 1 c. water
- 1 quart. blueberries
- 1 c. sugar
- 3 tbsp. cornstarch
- 1 pkg. (3 ounce.) cream cheese (softened)
- Wash, drain blueberries.
- Simmer 1 c. blueberries and 2/3 c. water about 3 min.
- Blend sugar, cornstarch and remaining 1/3 c. water, add in to boiling mix.
- Boil 1 minute, stirring constantly.
- Cold.
- Spread cheese over cooled pie shell.
- Save out 1/2 c. choice blueberries.
- Put remaining 2 1/2 c. blueberries in shell.
- Cover with cooked mix, garnish with the 1/2 c. blueberries.
- Chill till hard, about 2 hrs.
- Serve with sweetened whipped cream or possibly ice cream.
- Cheese can be omitted and is still delicious.
