Unfried Low-Fat Catfish(Servings: Four)
- 4 (4 oz.) strips fresh catfish fillets
- 1 tsp. thyme (dried)
- 1 tsp. basil (dried)
- 1/2 tsp. garlic powder
- light vegetable oil cooking spray (Pam)
- 1/4 c. yellow cornmeal
- 1/2 tsp. lemon pepper
- 4 tsp. blackening seasoning
- 1/2 tsp. paprika
- Preheat oven to 400u0b0.
- Spray the vegetable oil over baking sheet 3 times to coat.
- Put the cornmeal, thyme and basil on a large plate and mix well.
- Sprinkle just a pinch of garlic powder (1/8 teaspoon), 1/8 teaspoon of lemon pepper and 1 teaspoon of blackening seasoning on each catfish fillet.
- Then coat the fillets with the cornmeal mixture of thyme and basil and transfer them to the prepared baking sheet.
- Dust each fillet with 1/8 teaspoon of paprika and then cook each fillet lightly with cooking spray (Pam).
- Bake for 20 minutes at 400u0b0, then reduce heat to 350u0b0 for 5 minutes, until fish is golden brown and flaky.
