Swedish Braised Short Ribs
- 1 Tbsp. shortening
- 3 lb. short ribs, cut into 4 servings
- 1 medium onion, sliced
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 tsp. sugar
- 1/2 tsp. allspice
- 2 bay leaves
- 1 c. hot water
- 1/4 c. cold water
- 1 Tbsp. flour
- Heat Dutch oven until very hot, add shortening, then meat. Cook over high heat until meat is very well browned on all sides. Add onions, with fork, push down into fat around meat; cook a minute or so, or until browned.
- Add salt, pepper, 1 teaspoon sugar, allspice, bay leaves and hot water.
- Simmer, covered, 1 1/2 to 2 hours or until fork-tender.
- Remove meat to a
- heated platter and keep hot.
- Skim about 1/4 cup fat from liquid in Dutch oven. Stir cold water into flour, slowly add, stirring, to liquid and cook until thickened.
- Bring to boil, pour over meat, serve at once.
