Broccoli And Tasso Cheese Bisque Recipe
- 1/2 c. vegetable oil
- 1 lb Tasso ham, cubed
- 1 c. minced onion
- 3/4 c. minced red bell pepper
- 1/2 c. minced green bell pepper
- 1/2 c. minced celery
- 1 Tbsp. chopped garlic
- 1 c. flour
- 8 c. chicken broth, heated
- 2 c. heavy whipping cream
- 1 lb cheddar cheese
- 1 lb fresh broccoli cut into pcs
- 2 tsp Cajun Seasoning
- 1/2 tsp white pepper
- 1/4 c. chopped parsley
- 1/4 c. minced green onions
- Broccoli and cheese are a match made in Heaven.
- Be careful not to overcook the broccoli, this will help to maintain its green color and allow it to stay crunchy.
- Heat vegetable oil in a large saucepot over medium heat.
- Add in tasso ham and cook for 5 min.
- Be careful not to brown it.
- Add in onion, red and green bell pepper, celery and garlic.
- Cook for 5 min.
- Add in flour and stir till a roux is formed.
- Don't brown flour.
- Then add in the heated chicken broth and whip till a light sauce is formed.
- Simmer for 5 min.
- Stir in heavy cream, cheddar cheese, broccoli, Creole seasoning and white pepper.
- Cover and simmer for 10 min, stirring occasionally.
- Add in parsley and green onions.
- Divide into 6 large bowls and serve.
- Yields 6 servings.
