Creamy Cauliflower Soup

  1. All all ingredients to a soup pot and bring to a boil.
  2. Simmer uncovered for 10 minutes until vegetables are tender.
  3. Use an immersion blender to puree.
  4. (or transfer to a blender)
  5. Salt and pepper to taste.
  6. Garnish with cilantro or parsley.
  7. For vegetarian version, serve with dollop of sour cream.
