Cracked Wheat Bread
- 2 pkg. active dry yeast
- 1 c. warm water
- 1 c. milk, scalded
- 1 tsp. salt
- 2 tsp. butter
- 1/4 c. molasses
- 1 c. cracked wheat, soaked in cold water overnight
- 6 c. all-purpose flour
- Dissolve yeast in warm water in a large mixing bowl.
- In another bowl, pour the milk over butter, molasses and cracked wheat mixture, stirring until lukewarm, then combine with yeast and water, stirring.
- Gradually add half the flour and beat for 3 minutes, then add the rest of flour (needed) to make a stiff dough.
- Turn out onto lightly floured board and knead until satiny smooth.
- Place in greased bowl.
- Turn once.
- Cover with clean cloth and place in a warm spot.
- Let rise 40 minutes.
- Punch down, shape into loaves and place in greased bread pans.
- Bake in 375u0b0 oven for 10 minutes.
- Lower heat to 350u0b0 and bake for 40 more minutes.
- Remove from pans to rack; cool.
