Sweet And Sour Pork Or Chicken
- 1 (8 1/4 oz.) can pineapple chunks
- 2 (3/4 lb.) pork tenderloins or 3 boneless, skinless chicken breasts
- 2 Tbsp. vegetable oil
- 2 Tbsp. lemon juice
- 2 Tbsp. brown sugar
- 1 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. ground ginger
- 1 small green pepper
- 1 (6 oz.) pkg. frozen snow peas
- Drain pineapple.
- Reserve juice.
- Add water if not at least 1/2 cup.
- Cut pork or chicken into cubes; saute in large frying pan in oil for 10 to 12 minutes.
- Combine reserved pineapple juice, lemon juice and the next 6 ingredients; stir well.
- Add juice mixture and green pepper, cut into thin strips, to skillet. Cook for 1 to 2 minutes to thicken.
- Run water over snow peas to thaw.
- Add to skillet with pineapple chunks.
- Cook 2 minutes more. Serve over cooked rice and with egg rolls.
