Chinese Stir Fried Beef & Mushrooms Recipe
- 1/2 pound dry Chinese mushrooms
- 3 pound lean steak, cut into thin strips
- 1/4 c. flour
- 1 tbsp. sugar
- 1/2 c. sherry
- 1/2 c. soy sauce
- 3/4 c. oil
- 1 (2-inch) slice fresh ginger root, chopped
- 1 c. minced onions
- 2 c. beef bouillon
- Salt to taste
- Soak mushrooms in water 30 min.
- Drain well, set aside.
- Cut steak into strips.
- Combine sugar, flour, sherry and soy sauce in bowl.
- Add in beef, marinate 30 min, stirring frequently.
- Heat 1/2 c. oil in wok or possibly skillet; stir-fry ginger root 1 minute.
- Add in beef with marinade; stir-fry till beef changes color.
- Remove beef from wok.
- Add in remaining oil to wok.
- Add in onions; stir-fry till almost tender.
- Add in mushrooms; stir-fry softly.
- Place beef in wok; stir-fry about 2 min.
- Add in bouillon.
- Bring to boil.
- Reduce heat.
- Add in salt, cover and cook 2 min.
- Yields 8 to 10 servings.
