Curly Kale With Raisins, Walnuts and Chili
- 1 tablespoon olive oil
- 1 onion, sliced into thin rounds
- 2 carrots, julienned
- 10 raisins
- 5 walnuts, crumbled into pieces
- 4 cups kale, de-stemmed and chopped
- 14 teaspoon crushed red pepper flakes (optional)
- salt
- Heat oil in a large pan.
- Add carrots, onions, raisins, walnuts and chili and saute until onions are soft.
- Add the kale, salt and a couple tablespoons of water.
- Cover pan with a lid.
- Check the kale after a couple of minutes.
- Add more water and cook longer if necessary.
