Chicken Clemenceau Recipe
- 1 whole chicken, cut up, or possibly 4 chicken breasts
- 1/2 pound mushrooms
- 2 pods garlic, chopped
- 2 tbsp. flour
- 2 tbsp. minced parsley
- 1 can chicken stock
- 1 (8 ounce.) can peas
- 3 med. potatoes, cubed
- 1/4 - 1/2 pound butter
- Saute/fry potatoes in butter till light brown (crispy); set aside.
- Repeat with chicken and mushrooms individually and set aside also.
- Saute/fry garlic and push it to sides of pan; brown flour and then add in stock slowly.
- Return chicken to pan, cook 1 hour.
- Add in peas, mushrooms, parsley and potatoes.
- Heat thoroughly.
- Serves 4.
