Breakfast cup
- 2 eggs
- 1 vegetables
- 1 meat
- 1 potato
- 1 cooking spray
- 1/4 cup cheese
- 1 scallion
- 1/2 tsp italian seasoning
- 1 pepper
- Preheat oven to 350F.
- Spray 2 ramekins with cooking spray.
- Pack shredded potatoes or store bought hash browns in bottom of ramekins and bake for 10mins.
- Meanwhile sautee your choice of meats and vegetables with Italian seasoning and place over hashbrowns after the potstoes are slightly browned.
- Sprinkle cheese on vegetables/meat and then crack an egg on top and salt and pepper.
- Place back in the oven for 8 minutes or until the eggs are the desired consistency.
- Sprinkle one scallion over the cooked egg (optional).
