Phyllo-Wrapped Baked Brie with Mushrooms

  1. Cook mushrooms and onions in dressing in skillet until vegetables are tender, stirring occasionally.
  2. Cool.
  3. Brush 1 sheet of phyllo lightly with melted butter.
  4. Cover with layers of 3 additional phyllo sheets, brushing each layer with butter.
  5. Cut 10-inch circle from stack; discard trimmings.
  6. Cut cheese horizontally in half.
  7. Place one half of cheese in centre of phyllo stack; top with half of the mushroom mixture.
  8. Top with remaining cheese and remaining mushroom mixture.
  9. Wrap phyllo around cheese, folding phyllo as needed to completely enclose cheese.
  10. Brush with remaining butter.
  11. Place on baking sheets or in pie plates.
  12. Bake in 400F-standard oven for 15 min.
  13. or until golden brown.
  14. Serve with the crackers.
