Siberian Chicken
- 4 to 6 chicken breasts, halved or 8 to 10 thighs
- 8 slices bread, quartered
- 1 bunch American parsley, chopped
- 1 1/2 c. shredded Cheddar cheese
- 1 block butter or oleo, melted
- Hawaiian salt
- pepper
- garlic
- Rub chicken with Hawaiian salt, pepper and garlic.
- Set aside. In a food processor or blender, chop bread into crumbs on slice (4 pieces at a time).
- Empty crumbs into large mixing bowl.
- Add chopped parsley and shredded cheese.
- Mix together by hand.
- Dip chicken, 1 piece at a time, first in melted butter, then roll in crumb mixture until evenly coated.
- Place pieces in 9 x 12-inch roasting pan, lined with foil.
- Bake in 350u0b0 oven for 30 to 40 minutes, or until crumb coating is golden brown.
- Serves 4 to 6.
