Pork Saltimbocca
- 200 grams pork cutlets
- 50 grams prosciutto
- 8 small pieces of cheese (asiago, provolone, romano, ...)
- 1 tbsp olive oil
- 1/4 cup dry white wine
- 1 salt & pepper to taste
- 2 tsp dried sage or 8 fresh leaves
- 2 tsp small capers (optional)
- Preheat oven to 200 degrees C/ 400 degrees F.
- Oil a medium oven dish, add salt & pepper to taste and one teaspoon of dried sage.
- Place the pork cutlets.
- They should be thinly cut, either into 8 small pieces or two long ones.
- Place the cheese over the pork and cover with the prosciutto.
- Sprinkle the remaining sage.
- If using fresh, place the leaves over the prosciutto.
- You may use toothpicks to fix them together.
- Add the wine and cappers (if using).
- Place in the oven for about 20 to 30 minutes.
