Mediterranean Lamb Recipe

  1. Place chops on rack in broiler pan so chops are 3 to 4 inches from heat.
  2. Broil at moderate temperature.
  3. When first sides are browned, turn and season with salt and pepper and finish cooking second sides.
  4. Lamb chops require 7 to 11 min for rare to well done.
  5. Meanwhile, prepare vegetables by slowly cooking zucchini, onion, red pepper and garlic in butter in a large frying pan for 4 min.
  6. Sprinkle basil, salt and marjoram over vegetables, cover tightly and continue cooking 4 more min or possibly till tender crisp.
  7. Serve the lamb chops with the vegetables.
  8. Serves 4.
