Chilaquiles

  1. Take the 2 chicken breasts in a skillet with very little (half a cup) of water, let it boil @ 350F for about 15 minutes.
  2. Add diced onions as it boils
  3. Remove and dice chicken after it is cooked.
  4. In the skillet, combine the chicken, strips of bell pepper, let it simmer a few minutes then add the corn.
  5. (Also if you haven't added already to your preference go ahead and add: the salt, the pepper and the garlic)
  6. Now you can add in the tomatoes and the chili powder.
  7. After its had a while to simmer and soak up the tomatoes, you can now add the corn tortilla strips.
  8. After letting sit for a few minutes tortilla will begin to tear apart.
  9. turn off heat, add cheese of your choice, i.e.
  10. cheddar, monterrey jack or cream cheese as a topping.
