Chilaquiles
- 2 chicken breasts
- 1/2 cup water
- 1/2 onion
- 1 Bell pepper
- 1/2 tsp salt
- 1 tsp pepper
- 1 tbsp diced garlic or garlic powder
- 2 can corn
- 1 tsp chili powder
- 8 slice sliced corn tortillas (cut as you prefer)
- 1 can (or fresh) diced tomatoes
- 1 Cheese of your preference
- Take the 2 chicken breasts in a skillet with very little (half a cup) of water, let it boil @ 350F for about 15 minutes.
- Add diced onions as it boils
- Remove and dice chicken after it is cooked.
- In the skillet, combine the chicken, strips of bell pepper, let it simmer a few minutes then add the corn.
- (Also if you haven't added already to your preference go ahead and add: the salt, the pepper and the garlic)
- Now you can add in the tomatoes and the chili powder.
- After its had a while to simmer and soak up the tomatoes, you can now add the corn tortilla strips.
- After letting sit for a few minutes tortilla will begin to tear apart.
- turn off heat, add cheese of your choice, i.e.
- cheddar, monterrey jack or cream cheese as a topping.
