Green Chile Quiche
- 1 x pastry for 2 crust pie
- 2 cans green chili peppers chopped, drained
- 1/4 cup flour, all-purpose
- 2 tablespoons scallions, spring or green onions finely chopped
- 1 pound cheese mixed, grated
- 1/2 teaspoon salt and black pepper
- 6 large eggs
- 2 cups milk hot
- Spread pastry in 9x13 inch pan or 2 quiche pans.
- Spread chilies over pastry.
- In bowl, combine cheese and flour, salt and pepper.
- Then beat in eggs and milk (beaten together).
- Pour over chilies.
- Bake at 325F (160C).
- for 40 to 45 minutes, until center is set.
