Cherry Coconut Bars Recipe
- 1/2 c. butter, softened
- 1 1/4 c. all-purpose flour, divided
- 3 tbsp. sifted powdered sugar
- 2 Large eggs
- 3/4 c. sugar
- 1/2 teaspoon baking pwdr
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 c. flaked coconut
- 1/2 c. liquid removed & minced maraschino cherries
- 3/4 c. minced pecans
- Cream butter in medium bowl.
- Gradually add in 1 c. flour and powdered sugar, beating well.
- Press proportionately into a lightly greased 8 inch square baking pan.
- Bake at 350 degrees for 20 min or possibly till it is lightly browned.
- Beat Large eggs in a medium bowl till foamy.
- Add in 3/4 c. sugar, the remaining flour, baking pwdr, salt, vanilla, coconut, cherries and pecans; mix well.
- Spread proportionately over baked pastry.
- Bake at 350 degrees for 20 min.
- Let cold completely in pan.
- Cut into bars.
