Tiny Timmies
- 1 small can (9 oz) crushed pineapple
- 1/2 c butter or margarine
- 1 c light brown sugar
- 1 egg
- 2 c flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 - 6 oz pkg butterscotch bits
- 1/2 c chopped walnuts
- Candied cherries for decoration
- Strain pineapple, saving syrup.
- Cream butter and brown sugar. Add egg.
- Measure our 3 Tbsp of the pineapple syrup and whip into butter mixture until smooth.
- Add sifted dry ingredients; stir slowly until well bel ended.
- Add crushed pineapple, butterscotch bits and nuts.
- Mix well.
- Spoon onto greased cookie sheet and put a cherry in the middle of each cookie.
- Bake at 375 degrees for 10 to 12 minutes.
- Cookies will be very soft when finished; remove from cookie sheet very carefully.
- Makes 24 cookies.
