Shrimp With Pea Pods Stir-Fry
- 1 tsp. cornstarch
- 1/4 tsp. ground ginger
- 2 Tbsp. soy sauce
- 2 Tbsp. dry sherry
- 1/2 c. chicken broth
- 3 Tbsp. salad oil
- 1 clove garlic, minced
- 1 lb. medium shrimp, shelled
- 1 (6 oz.) pkg. frozen pea pods, thawed
- 1 can water chestnuts, drained and thinly sliced
- 3 green onions, thinly sliced
- Mix cornstarch and ginger.
- Blend in soy, sherry and broth. Set aside.
- Place wok over high heat.
- When wok is hot, add oil. When oil is hot, add garlic and shrimp.
- Stir-fry 1 minute.
- Add peas and stir-fry for about 2 minutes if fresh or 30 seconds if frozen.
- Add water chestnuts and green onions.
- Stir to mix.
- Add cornstarch mixture and stir until it boils and thickens (about 1 minute).
