Baked Salmon with Honey Glazed Carrots

  1. PREHEAT oven to 400F.
  2. Place salmon in a shallow baking dish lightly coated with cooking spray.
  3. Spoon orange juice over top.
  4. Bake salmon for 10 to 15 min., or until fish flakes easily with a fork.
  5. PREPARE rice according to package directions.
  6. BRING carrots, dressing, and honey to boil in a saucepan.
  7. Reduce heat to medium-low; cover.
  8. Simmer for 15 min., or until tender.
  9. Sprinkle with pecans.
  10. SERVE each person about 5 oz.
  11. cooked salmon, 1 cup carrots, and 3/4 cup rice.
  12. COMBINE CRYSTAL LIGHT On-the-GO packet with bottled water per package directions.
  13. Serve each person 1 water bottle with their meal.
