Baked Salmon with Honey Glazed Carrots
- 1 lb. salmon fillet or steak (4 4-oz. portions) Walmart Supercenter 1 lb For $5.00 thru 02/14
- 1/4 cup orange juice
- 3 cups hot cookedinstant brown rice
- 4 cups sliced frozen carrots, thawed
- 1/4 cup KRAFT Balsamic Vinaigrette Dressing
- 1 Tbsp. honey
- 2 Tbsp. PLANTERS Pecan Halves, toasted
- 4 On-the-Go packets
- 4 bottles of water, 20 fl oz
- PREHEAT oven to 400F.
- Place salmon in a shallow baking dish lightly coated with cooking spray.
- Spoon orange juice over top.
- Bake salmon for 10 to 15 min., or until fish flakes easily with a fork.
- PREPARE rice according to package directions.
- BRING carrots, dressing, and honey to boil in a saucepan.
- Reduce heat to medium-low; cover.
- Simmer for 15 min., or until tender.
- Sprinkle with pecans.
- SERVE each person about 5 oz.
- cooked salmon, 1 cup carrots, and 3/4 cup rice.
- COMBINE CRYSTAL LIGHT On-the-GO packet with bottled water per package directions.
- Serve each person 1 water bottle with their meal.
