Zucchini Cake(Best Ever)
- 3 c. sifted flour
- 1 1/2 tsp. soda
- 1 tsp. baking powder
- 2 c. sugar
- 2 tsp. vanilla
- 2 c. grated zucchini
- 1 1/2 c. chopped nuts
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 c. salad oil
- 3 eggs
- 2 Tbsp. sherry
- 1 tsp. grated lemon peel
- 1 c. seedless raisins or chopped dates
- Combine flour, cinnamon, soda, baking powder and salt, mixing well.
- Set aside.
- Beat together salad oil and sugar.
- Add eggs one at a time, beating well after each addition.
- Add vanilla and sherry.
- Add flour mixture little by little.
- Add zucchini and lemon peel.
- Stir to blend.
- Fold in nuts and raisins (or dates). Turn into a well-greased 10-inch angel food pan or 9-inch Bundt pan.
- Bake in a 325u0b0 oven for one hour and 15 minutes or until done.
- Let stand 5 minutes.
- Turn out on rack to cool.
- If desired, add vanilla glaze of choice.
