Turkey-Rice Salad
- 6 oz. skinned and boned turkey, chilled and diced
- 1/2 c. cooked long grain rice, chilled
- 1/4 c. diced celery
- 2 Tbsp. diced onions
- 2 Tbsp. diced red bell pepper
- 1 1/2 tsp. parsley, chopped
- 1 Tbsp. mayonnaise
- 1 Tbsp. sour cream
- 1/4 tsp. Dijon style mustard
- dash of salt, pepper and garlic powder
- 2 iceberg, romaine or loose leaf lettuce leaves
- In 1-quart bowl combine turkey, rice, celery, onions and red pepper.
- In a small bowl thoroughly combine mayonnaise, sour cream, parsley, lemon juice, mustard and seasoning.
- Pour dressing over salad and toss well to coat.
- Cover and refrigerate until chilled.
- Toss again just before serving.
- Serve on lettuce leaves.
- Makes 2 servings.
