Creamy Mocha Tapioca Pudding

  1. Whisk egg and milk in medium saucepan until blended.
  2. Stir in sugar and tapioca; let stand 5 min.
  3. Bring to full rolling boil on medium heat, stirring constantly.
  4. Remove from heat.
  5. Add instant coffee and vanilla; stir until mixture is well blended.
  6. Cool 20 min.
  7. ; stir.
  8. (Pudding will thicken as it cools.)
  9. Serve warm or chilled topped with COOL WHIP.
