Creamy Fiesta Corn Dip
- 3 cups Frozen Or Fresh Corn
- 6 ounces, weight Cream Cheese, Softened
- 1 whole Fresh Jalapeno, Minced (take Out The Seeds To Avoid Too Much Spice)
- 2 Tablespoons Diced Pickled Jalapeno
- 2 Tablespoons Minced Onion
- Salt And Pepper, to taste
- Thaw the corn in the microwave corn for 30 seconds at a time, stirring occasionally, until thawed.
- If the cream cheese is not very soft, add it to the bowl before the last 30 seconds of microwave time.
- Combine the 2 types of jalapeno and onion with the corn and cream cheese.
- Taste, and add salt and pepper as needed.
- Tip: adding 1 tablespoon of pickled jalapeno juice is another great flavor-enhancer if youd like to add more spice or tang.
- A note on spiciness: Taking out the seeds and ribs of the jalapeno will reduce the heat level.
- This might be a better option for children.
- The jalapeno flavor will intensify as the dip sits, so dont be surprised if its spicier the next day!
