Canadian Aboriginal Peoples Gourmet Moose Roast

  1. Place meat in a roasting pan and roast at 400 F. for 15 minutes.
  2. Meanwhile, in a small bowl whisk together oil, vinegar, curry and garlic powder.
  3. Baste meat with this mixture, reduce heat to 325 F. and roast another 15 minutes.
  4. Meanwhile, in a small bowl mix together pancake mix, paprika, salt and pepper.
  5. Coat meat all over with this mixture; roast another 2 1/2 hours for medium meat.
  6. Let roast stand 15 minutes before carving.
  7. Serves 8 to 10.
