Canadian Aboriginal Peoples Gourmet Moose Roast
- 4 to 6 lb. moose roast
- 1/2 cup vegetable oil
- 2 tbsp. red wine vinegar
- 1 tsp. curry powder
- 1 clove garlic, crushed
- 1/2 cup pancake mix
- 1 dash paprika
- 1 tsp. sea salt
- Fresh ground pepper to taste
- Place meat in a roasting pan and roast at 400 F. for 15 minutes.
- Meanwhile, in a small bowl whisk together oil, vinegar, curry and garlic powder.
- Baste meat with this mixture, reduce heat to 325 F. and roast another 15 minutes.
- Meanwhile, in a small bowl mix together pancake mix, paprika, salt and pepper.
- Coat meat all over with this mixture; roast another 2 1/2 hours for medium meat.
- Let roast stand 15 minutes before carving.
- Serves 8 to 10.
