Asian Chicken & Nut Spring Rolls

  1. Combine chicken, nuts and 1/3 cup dressing.
  2. Soak 1 rice paper sheet in bowl of hot water until pliable; place on paper towel.
  3. Spoon 1/4 cup cabbage onto bottom third of rice paper; top with 3 onion pieces, 2 red pepper strips, 2 cilantro sprigs and 2 Tbsp.
  4. chicken mixture.
  5. Fold over opposite sides of paper, then roll up (starting at bottom edge of paper) to completely enclose filling.
  6. Place, seam side down, on large sheet of plastic wrap.
  7. Repeat with remaining rice paper sheets and filling ingredients.
  8. Wrap tightly with plastic wrap.
  9. Refrigerate.
  10. Cut diagonally in half to serve with remaining dressing as dipping sauce.
