Asian Chicken & Nut Spring Rolls
- 1-1/2 cups shredded cooked chicken Whole Foods 1 lb For $3.99 thru 02/09
- 1/2 cup PLANTERS Slivered Almonds, toasted, chopped
- 2/3 cup KRAFT Lite Asian Toasted Sesame Dressing, divided
- 12 rice paper sheets (8 inch)
- 3 cups shredded napa cabbage
- 4 green onions, cut lengthwise in half, then crosswise into thirds
- 1 red pepper, cut lengthwise into 12 strips, then crosswise in half
- 24 sprigs fresh cilantro
- Combine chicken, nuts and 1/3 cup dressing.
- Soak 1 rice paper sheet in bowl of hot water until pliable; place on paper towel.
- Spoon 1/4 cup cabbage onto bottom third of rice paper; top with 3 onion pieces, 2 red pepper strips, 2 cilantro sprigs and 2 Tbsp.
- chicken mixture.
- Fold over opposite sides of paper, then roll up (starting at bottom edge of paper) to completely enclose filling.
- Place, seam side down, on large sheet of plastic wrap.
- Repeat with remaining rice paper sheets and filling ingredients.
- Wrap tightly with plastic wrap.
- Refrigerate.
- Cut diagonally in half to serve with remaining dressing as dipping sauce.
