Healthy Applesauce Cake Recipe
- 1 3/4 c. sifted whole wheat flour
- 1 1/2 c. unsweetened applesauce
- 3 tbsp. fructose
- 1 c. honey
- 2/3 c. butter
- 1/3 c. lowfat milk
- 2 Large eggs, at room temperature
- 2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1 c. raisins
- 1/2 c. minced walnuts
- Apple juice
- Hot honey and cream with butter.
- Add in fructose to unsweetened applesauce, set aside.
- Add in Large eggs to creamed mix and mix well.
- Add in lowfat milk and applesauce and continue to beat while you measure remaining ingredients except raisins and nuts.
- Beat dry ingredients with applesauce mix just till mixed well; don't overbeat.
- Stir in raisins and nuts; pour batter into a well-greased 9x13 inch pan.
- Bake at 350 degrees for 40-45 min, cold 10 min, then invert on wire rack.
- Mist immediately with a generous portion of apple juice sprayed from a plant mister.
