Cranberry Squares With Pineapple
- 2 cups fresh cranberries
- 34 cup crushed pineapple, drained (reserve 1/4 cup)
- 1 12 cups sugar
- 14 cup reserved pineapple juice
- 12 cup oatmeal
- 34 cup butter
- 1 cup brown sugar
- 1 12 cups flour
- 12 teaspoon baking soda
- 14 teaspoon salt
- Combine first 4 ingredients in a pot.
- Bring to a boil over medium heat.
- Lower temperature and simmer until thick.
- (about 1/2 hour).
- Set aside to cool.
- In a large bowl mix remaining ingredients.
- Spread 1/2 of mixture in a greased 9"x13" pan.
- Press firmly.
- Top with cranberry mixture.
- Then with remaining crumb mixture.
- Bake in 400 degree oven for 25 minutes.
- cool and cut into squares.
