Cheesy Green Chili Soup
- 3 cups chicken broth, divided
- 3/4 cup chopped onion King Sooper's 1 lb For $0.99 thru 02/09
- 6 poblano chiles, roasted, peeled and deveined
- 1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 2 Tbsp. butter or margarine
- 2 Tbsp. flour
- salt and black pepper
- 1/2 cup KRAFT Shredded Mozzarella Cheese
- Place 1 cup of the broth, onion, chiles and sour cream in blender container; cover.
- Blend until smooth.
- Melt butter in medium saucepan on medium heat.
- Stir in flour.
- Add chile mixture; mix well.
- Gradually add the remaining 2 cups broth, stirring until well blended.
- Reduce heat to medium-low; simmer 10 min., stirring frequently.
- Season with salt and black pepper to taste.
- Ladle the soup into 4 soup bowls; sprinkle with cheese.
